Newest Follower

I think it's only fitting to celebrate my newest follower.
Although you won't find her listed as a "follower",
you can be certain she's checking out the posts.
She has At Home With The Hinsons
bookmarked on her desktop.
Wanna know who this shout out is for?
My NANNY!!!

I'm not really sure how it happened,
but boy am I glad it did.
She jumped aboard this crazy ride through cyberspace.
HOLLA!!! 

Over the years there were many ways 
I've wanted to be just like my Nanny,
when I grow up.
The woman that could run a nursing home,
care for her family, 
and still find time to pitch a game of softball.
She's loved me more than the law should allow.
Her cooking is the best that's ever been.
And she's as feisty as the day is long.

Her willingness to own her first computer
and determination in learning to navigate it
is absolutely inspiring. 
This latest feat just proves that my Nanny
loves her family,
more than a hog loves slop...
and that's a lot of love!

Leprechaun Pie??

Hi all and happy Monday!
Today was especially productive for me...
cleaning bathrooms,
monthly business taxes,
scheduling classes at the hospital,
running errands...
yes, ADD at it's finest. ;>
Oh how I love checking off my to do list!
But, the best part of the day was eating dinner with Nanny & Op.
Nanny made a new recipe of Hamburger casserole, black eyed peas, macaroni & cheese, turnip greens and cornbread.
Mmmhhhh! :)

As I was poking around before dinner (which is a given) I spied a pie dish covered with aluminum foil.
I lifted the corner of the foil revealing a delicious looking pie and asked
"Who's this pecan pie for?"
Nanny explained that we were having it for desert, along with vanilla ice cream.
About that time James came busting into the kitchen yelling
"I wanna see,
I wanna see the Leprechaun Pie!!!"


I love the world according to James.

I Tasted Summer Today



Today I tasted my first bite of summer, and I just had to share it with you. My bread wasn't white like my Nanny's, and the tomatoes weren't vine ripened like my Grandpa's. But, all things considered, it gave me a taste of summer which was exactly what I needed. A glimpse forward... the boys out of school, slower paced mornings, the sun shining bright and a wardrobe consisting of bathing suits and flip-flops. Yep, I'd say that tomato sandwich was just what I needed to keep me going these next couple of weeks! :D

Nanny's Chicken Fingers



So, you live in the south and you haven't seen your family in quite sometime. You call them and say "I'm cooking dinner Sunday, can you be here at 5pm?" Their reply... "what ya cookin'?" "Umh, probably some chicken fingers, peas, slaw, deviled eggs, mashed potatoes, biscuit & gravy."  Then comes the answer, "YES MAM, WE'LL SEE YOU AT 5pm!!!" And so that is how tonight's dinner started. Nanny wanted to see the grandkids & we were hungry (I mean happy) to attend! :D
